Roasting Garlic

Roasted garlic should be a staple in everyone's kitchen. Even if you usually don't like garlic, you might be surprised how mellow and enjoyable it is when roasted. It has a multitude of uses and the health benefits are pretty great as well. Garlic is full of a beneficial sulfur compound called allicin. Allicin is believed to lower cholesterol and blood pressure levels, enhance the immune system, improve resistance to allergies, regulate blood sugar levels and more. Aim for a clove a day, or more, if you're looking to improve any of the mentioned conditions. That might seem like a lot if you're not already eating much garlic, but in some places, such as Italy, daily garlic consumption is as high as eight cloves!
