A perfectly cooked string bean can be a challenge. Even professionals sometimes miss the mark when cooking beans.
Here is a tip for perfectly cooked beans every time: The next time you visit your favorite farm vendor, have them toss one purple string bean in with your string bean purchase. Purple beans do not retain their color when cooked.
When poaching, sauteing or a combination of both, You will know the exact moment your beans are done cooking because your purple bean will turn an off color greenish purple. The moment it turns green your beans are perfectly cooked! Remove from heat. Immediately toss with your favorite topping and serve. Plunge into ice water to prevent over-cooking and use for fresh beans on salads, a super tasty and healthy snack, a quick reheat vegetable for later in the week or place them on a toasted English muffin, cover in cheddar cheese and broil until golden brown.
