Fight Cancer with . . . Kale?

Kale is a superfood:  It is full of good things that our bodies love.  Yesterday's post discussed how to quickly process kale, but didn't delve into why.  Why does this big green bunch of leaves keep showing up in my share?  Why should I take the time to learn what to do with this stuff?  You may not have actually had those thoughts . . . but I assure you that if you have, you're not alone. Take it from Diana Dyer.  She is a registered dietician AND a cancer survivor who has devoted an entire blog to the why and how of eating kale.  Kale if full of antioxidants including carotenoids like lutein and beta carotene and flavonoids like kaempferol and quercitin that are proven to fight cancer.  Kale also has an excellent amount of calcium--one cup has nearly the amount of absorbable calcium as one cup of milk--potassium, vitamin C, vitamin B6 and folate.  For more kale information visit Diana's blog, 365 Days of Kale.
