Since moving to Vermont two years ago, beets have quickly become one of my favorite foods. The local beets I've enjoyed here, no matter how I've cooked them, far surpass the one or two times I tried and despised them as a child. Whether grated raw in salads, layered with mozzarella cheese and basil, or in a creamy risotto, this is a vegetable I have yet to regret giving another chance.
Though this post is a little late in the month, we're happy Windam County Farm to School has spent the time highlighting beets.
