Welcome to the last installment of Eat Your Freezer Clean! Over the last few weeks, we have cleaned out the freezer to get ready for the “bounty” coming this summer, then gave your lots of ideas to use up your leftover veggies and fruits. This week, we will focus on a few key recipes to inspire you to use everything that is left – Stone Soup, Pot Pie and Mini Pizzas.
A couple of weeks ago, on What’s Cooking Rutland?, the community television program on PEG-TV, Bethany Yon and I made a host of delicious mini pizzas to use up the odds and ends in our freezers. We proofed yeast, mixed up a delicious whole wheat dough, stretched into individuals pizza rounds and made up a batch of pies – butternut squash/chevre/sage; pan roasted onions/fresh mozzarella/pesto; sweet peppers/spinach/onions – along with lots of others.
Another great way to use up leftovers is to make a delicious Stone Soup or Turkey Pot Pie. A little bit of cooking is involved, but in the end you get delicious and healthy meals that not only are quick to make, but utilize all the good things in your freezer.
